Honteri
Honteri is a form of non-alcoholic mirin made from starch syrup, fermented rice and vinegar. It makes an ideal substitute for mirin if you do not or cannot use alcohol. Having no alcohol, honteri has two advantages over mirin - one, it is cheaper because it is not taxed as alcolhol and two, it does not need to be cooked to evaporate the alcohol from a dish or a sauce before serving.
