About the Recipe
This is, as the title implies, the simplest sushi dish you will ever make. Not only is it simple to prepare, but it also needs no special equipment or raw fish. I serve this regularly for parties and buffets and the plate is almost always the first to be finished - it's as easy to eat as it is to make!
Ingredients
2 cups of Japanese rice / 300g/ 10oz Japanese rice
4 tbsp sushi vinegar
1/2 cucumber
1/2 tsp salt
6 baby tomatoes
a handful of rocket/ruccola
1 avocado
100g / 3.5oz frozen sweetcorn
1 tsp vegetable oil
2 fillets salmon
some soy sauce & wasabi
Preparation
Rinse the rice a few times, until the water becomes almost clear. Cook in a saucepan or rice cooker if you have one.
Meanwhile, prepare the vegetables and salmon:
Cut the cucumber into quarters lengthways. Slice out the part with the seeds and discard. (This will stop your rice getting soggy later on.) Cut the quarters into fine slices, then put the slices in a bowl. Sprinkle with the salt and leave to stand for 10-15 minutes.
Halve the baby tomatoes and set aside.
Chop the rocket roughly and set aside.
Halve the avocado and remove the stone. Peel and then cut each half into 5 - 6 slices. Then, cut into little bite sized pieces.
Pour about 2 cm / 1 inch pf water into a small pan. Bring to the boil and cook the sweetcorn for 4 minutes, thn drain.
Heat 1 tsp of vegetable oil in a frying pan. Fry the salmon fillets skin side down for 4 - 5 minutes with the lid on. Turn the fillets over and fry for another 4 minutes or until cooker through. Transfer the salmon fillets to a plate.
When your rice is ready, spoon it out into a large mixing bowl. Add the sushi vinegar about 2 tsp at a time, gently mixing it into the rice.
Break up the salmon using a spoon or a fork into small pieces and remove the salmon skin.
Back to the salted cucumber. Give the cucumber pieces a good squeeze in your hand a few times to squeeze out the fluid from the flesh.
Now to assemble your dish:
Add the sweetcorn, the cucumber, the avocado and the salmon flakes to the rice, stir everything together gently with a large spoon.
Turn out your your Maze Zushi onto a serving plate, top with some tomatoes and chopped rocket over the rice.
