About the Recipe
This is the third of my trio of doria recipes - this time with minced beef.
Ingredients
for the meat sauce:
200g minced beef
1/2 tin of tomatoes (200g)
90g onion
30g carrot
1/2 celery stick
1 clove of garlic
1/2 tbsp tomato ketchup
1/2 tbsp tomato puree
1/4 tsp pepper
1/2 tsp salt
1 tbsp olive oil
for the white sauce:
3.5 tbsp plain flour
300ml milk
40g butter
1/8 tsp pepper
1/4 tsp salt
310g cooked rice*
15g butter
80g grated cheddar cheese
some chopped parsley for garnishing (optional)
* this recipe is great for using leftover rice
Preparation
to make the meat sauce, chop the garlic, onion, celery & carrot finely
heat the olive oil in a frying pan, add the chopped vegetables and fry for 1-2 mins
add the minced meat, salt & pepper and fry for further 1-2 mins
add the tomato, ketchup & puree, and simmer for 10-15 mins
next make the white sauce:
over a medium heat, melt the butter in a pan, add the flour and mix well, then add the milk a little at a time and mix well into a smooth sauce
mix the butter and cooked rice together in a bowl (if the rice is cold, heat it up in the microwave prior to this step)
place the rice in an oven proof dish then add the layer of white sauce and top with a layer of meat sauce
add the cheese around the edge, leaving the centre as it is (i used a small plastic lid to get a nice uniform shape, but do remember to remove it before grilling!)
grill for 8-10 mins or until the cheese is golden brown
sprinkle with the chopped parsley
your meat sauce doria is ready to serve
