About the Recipe
If you ever visit Japan, you'll find all sorts of matcha flavoured foods from chocolate bars to icecream. It's easy to create your own matcha flavoured desserts and cakes - just make sure you buy a good quality matcha powder (it's not cheap but a little does go a long way) and you'll get the full flavour of matcha in your cooking
Ingredients
1 egg
70ml veg oil
100ml milk
150g self raising flour, sieved
1 tsp baking powder
90g sugar
1/8 tsp salt
1.5 tbsp matcha powder
60g dried raisins
8 small paper cups for muffins
Preparation
break the egg into a bowl, add the veg oil and whisk
add the milk and whisk again
in another bowl, combine the self raising flour, baking powder, sugar, salt & matcha powder and mix well
add the flour mixture to the egg mixture and mix lightly, then add the raisins and mix once more
heat your oven to 180 C / 350 F
spoon the muffinmixture into your paper cups and thn put the cups into a cup cake baking tray
bake the muffins for 13-15 mins
