About the Recipe
If you like omurice, this is another dish that I am sure will become a favourite too. Along with the addition of Korea's national food, kimchi and some cheese, this recipe also features a rather slick way to present the omelette - as I always do when there is a new technique to master, I encourage you to take a look at the video tutorial to get a visual idea of what to do.
Ingredients
40g chicken breast or thigh
1/4 green bell pepper (30g)
150g kimchi
360g cooked rice
1/2 tbsp soy sauce
1 tbsp sesame oil
4 large eggs
4 tsp vegetable oil
50g grated cheddar cheese
1 spring onion, finely chopped for topping (optional)
Preparation
finely chop the chicken and the bell pepper
heat 1 tbsp of sesame oil in a frying pan, add the bell pepper & chicken and stir fry for 1 - 2 mins
add the kimchi, cooked rice & soy sauce and stir well for 2 - 3 mins, until mixed well
when the rice base is ready, remove from the heat and set aside.
use a bowl to mould 1/2 the fried rice and tip out onto each serving plate
heat 2 tsp of veg oil in a frying pan and beat of the 2 eggs in a bowl. pour the eggs into the hot frying pan, then quickly sprinkle over 1/2 the cheese
when the bottom of the omelette is partially set, use a pair of chopsticks to twist the omelette from the edges towards the centre, so the omelette is about the right size to cover the rice.
before the omelette cooks completely. use a slice to gently slide it out of the pan & over the rice
repeat for your second serving
sprinkle the omelettes with some chopped spring onion
