Japanese Hamburg steak with Shimeji mushroom sauce

About the Recipe

This is my favourite way to eat a Japanese style hamburg steak. It's easy to prepare and really so good to eat. Of course, you got to like burgers and mushrooms, but if you do, this is a real treat!

Ingredients

for the burger:


500g / 17.5 oz good quality minced beef

1 small onion

20g / 1 oz panko breadcrumbs

1/8 tsp salt

1/8 tsp pepper

1/8 tsp nutmeg

1tbsp milk

1 small egg

10g / 0.5 oz butter

1 - 2 tbsp vegetable oil for frying


for the shimeji mushroom sauce:


60g /3 oz shimeji mushrooms

3 tbps red wine (or water if you prefer)

3 tbsp tomato ketchup

2 tbsp brown sauce


Preparation

for the burgers:


soak the breadcrumbs in the milk


chop the onion finely


melt the butter in a small saucepan and fry the onion for 3 - 4 minutes over a medium heat until cooked


combine all the burger ingredients in a bowl and mix well


divide into 4 portion and form in burgers


fry the burgers over a medium heat for 3 - 4minutes. flip and repeat


for the shimeji mushroom sauce:


fry the shimeji mushrooms in a small pan for 1 minute. add the red wine and bring to the boil


add the ketchup and brown sauce. cook for 1 minute while stirring
