Stir Fried Corned Beef & Sugar Snaps

About the Recipe

It's 25 years since my first English language cookbook - Japanese Cooking for Two - was published. This was one of the dishes featured in that book. It's quick, simple and good to eat. I hope you enjoy it!


160g sugar snaps or mangetoutes

200g corned beef (tin)

1/2 tbsp vegetable oil

1/2 tsp soy sauce

a little pepper


rinse the sugar snaps in water, remove the strings from sugar snaps if you prefer, so it’s easier to eat them

slice & cut the corned beef into 1cm cubes

heat the oil in a frying pan and stir fry the sugar snaps for 1-2 mins

sprinkle with a little pepper

add the corn beef to the pan and stir fry another 2 mins

sprinkle over the soy sauce and mix

your stir fried corned beef with sugar snaps is now ready. serve as a side dish with rice and a vegetable dish
