About the Recipe

This dish defies boundaries - any one of a number of Asian countries could lay claim to ownership. I would imagine it is served in households all over Asia and at thousands of street side stalls. It is, as it says above, simple, wholesome food that is quickly prepared and equally quickly put away in hungry stomachs

320g pork shoulder steak

1 tsp japanese cooking sake

2 tsp soy sauce

2 tsp sesame oil

1/3 red pepper

4 asparagus spears

10 sugar snaps

1 tbsp veg oil

a little salt & pepper

1 tbsp mirin

3 tbsp soy sauce

2 tsp sugar

400g-450g cooked rice

2 tsp toasted black or white sesame as a garnish

Preparation

thinly slice the pork

put the pork, sake, soy sauce & sesame oil in a bowl, mix well, then leave to stand for at least 15mins

thinly slice the pepper

remove the base of the asparagus spears and slice diagonally

heat the veg oil in a pan, add & stir fry all the vegetables with the salt and pepper for 2 - 3 mins, then remove to a warm plate

stir fry the pork in the frying pan for 3 - 4 mins or until cooked

add the mirin, soy

sauce & sugar to the frying pan

fry the meat over a high heat for a further 1 - 2 mins

put the vegetables back into the frying pan and stir together well
