About the Recipe
Legends abound in Japan about the years of experience sushi chefs spend learning the art of making sushi rice. But it doesn't have to take you so long to learn how to make a basic sushi rice that everyone can enjoy. In fact, it takes about 15 minutes! Now that might not go down to well in the sushi bars of Tokyo but I'm sure it will go down well in your home!
Ingredients
cooked Japanese short grain rice from 480g dry rice
80ml rice vinegar
2 tbsp white sugar
0.5 tsp salt
Preparation
combine the rice vinegar, sugar and salt in a saucepan. stir over a medium heat until the sugar has dissolved. this is now your sushi vinegar
add the sushi vinegar a little at a time to the rice. mix slowly and gently using a slicing motion to avoid mashing the rice
keep adding and mixing until all the sushi vinegar is used up
