About the Recipe
Japanese potato korokke are frequently on my menu of things to make but sometimes I like to mix it up a little bit. So, for this recipe I oven bake instead of deep frying the korokke and I use a sweet potato - I think you'll agree that this really works!
Ingredients
350g / 12oz sweet potato
1/2 onion, peeled
1 tbsp of vegetable oil
120g / 4 oz minced beef
1 tsp of cumin powder
salt & pepper
2 tsp of dried parsley
1 medium egg
30g / 1oz plain flour
40g / 1.5 oz Panko breadcrumbs
for oven baking:
2 - 3 tbsp vegetable oil
Oven setting 220 C / 430 F (fan)
for drizzling
Bull-dog brown sauce
Preparation
peel the sweet potato, then slice, cut into chunks and place in a large saucepan
cover the sweet potato with cold water. bring to the boil and simmer for about 10 mins or until the chunks have softened
test the sweet potato to make sure they are cooked, then drain
slice and dice the onion
heat 1 tbsp of vegetable oil in a small frying pan. add the onion and stir for about 1 minute. next, add the minced beef. stir again for 1 minute
add the cumin powder, salt & pepper and stir fry until the beef is cooked
put the drained sweet potato into a bowl and mash it well
add the cooked minced beef mixture and dried parsley and mix everything well
divide the mixture into 4 equal pieces
break the egg into a small bowl. beat and set aside
now put 1 tsp of vegetable oil on the palms of your hands, so that the potato beef mixture won’t stick
take 1/4 of the potato beef mixture and form it into a rough round korokke. next, dip it into a bowl of the flour and form into a slightly flat round shape. dip your korokke into the beaten egg, then roll in the panko breadcrumbs until it is coated well
repeat to create 3 more korokke
heat your oven (fan) to 220 C/ 430 F. brush a small baking tray with oil and place the korokke onto the tray. next, lightly brush each korokke with a coating of vegetable oil
put the korokke into your oven and bake for 15 - 20 minutes or until lightly brown
serve with some salad and just before eating, drizzle generously with brown sauce
