About the Recipe
These are, I like to think more than just a plain potato croquette. The sweet potato is mixed with some leek to provide a little more taste complexity. I also add a cheese cube as a little surprise inside but you can omit this if you prefer. These croquettes are substantial enough to stand alone as a lunch or supper although I usually pair them with a soup or another vegetable dish.
Ingredients
750g sweet potato
230g cheddar cheese (optional) cut into cubes
40g leek, finely chopped
1 tsp sugar
1/8 tsp salt
1/8 tsp pepper
2 tbsps milk
80g plain flour
100g breadcrumbs
1 egg
veg oil for deep frying
kitchen paper
Preparation
cut off the ends of the sweet potato, peel and cut into small chunks
place the sweet potato chunks in a bowl, cover the top with clingfilm and microwave on high for 10 mins
saute the chopped leek with the salt & pepper until soft
now that the sweet potato is cooked, mash it, then add the leek and the sugar and mix well
put a little oil on your hands, then take a heaped tbsp of the sweet potato mash and form into a ball, pushing a cheese cube into the centre, repeat until you have used all the sweet potato
beat the egg and the milk together
coat each ball in the flour, then dip in the egg/milk
then coat each ball in the breadcrumbs until they have a nice uniform covering
heat 4 cm / 2 inch of veg oil in a pan to 180C
deep fry the croquettes for 1.5 - 2 mins until golden brown
remove and rest on kitchen paper to absorb any excess oil
your croquettes are now ready to serve
