Sweet Soy aubergine donburi

About the Recipe

You don't need to be a vegetarian to enjoy this meat free donburi. It's quick light and makes for a great nutricious, one bowl meal. The sauce has a rich flavour thta is bound to satusy even the most ardent meat lover.

Ingredients

1 medium aubergine (300g / 10 oz)


1-2 sesame oil


for the sauce:


1 tbsp sugar

2 tbsp soy sauce

2 tbsp mirin*

1 tsp potato flour

450g cooked rice

2 spring onions

some toasted sesame seeds for topping


*you can use 1 tbsp of honey as  a substitute for the mirin. if you do so,  then you will also need to reduce the amount of potato flour a little to prevent the sauce from overthickening

Preparation

how to:


remove the stalk from an aubergine.  cut it in half lengthways, then cut into 1 cm slices


put the aubergine slices in a bowl. add the water and soak for 10 mins before draining


put the sugar, soy sauce, mirin (or honey) and potato flour in a small bowl and mix well. set aside


rinse the spring onions and slice them finely


heat your frying pan.  add 1 tbsp of sesame oil, then add the aubergine slices. fry until they become lightly browned.

if they look a little dry,  add another 1 tbsp of sesame oil to the pan and keep frying


now add the mixed sauce to the pan and stir everything together quickly


to assemble your donburi, first place 1/2 the cooked rice in a serving bowl.  place 1/2 aubergine on the rice. top with 1/2 chopped spring onion.  lastly sprinkle some sesame seeds


repeat for your second donburi bowl
