About the Recipe
If you have never tried lotus root before, this is a great way to experience it's lovely, cruncy texture and nutty flavour If you are looking for a low calorie, meat substitute that's healthy and nutricious as well as filling, lotus root fits the bill to a tee. What's more, the recipe is quick and simple to make. Need I say more?
Ingredients
240g fresh lotus root
1 tbsp white vinegar
some water
1 tbsp sesame oil
1.5 tbsp mirin or 2 tsp honey
1.5 tbsp soy sauce
a little chilli flakes as you wish
1 tsp toasted sesame seeds
Preparation
peel the lotus root, cut in half and then cut into 5 mm slices
soak in a bowl of water with the vinegar for at least 10 minutes. drain well
pat dry with kitchen paper
heat the sesame oil in a frying pan. add the lotus root and fry for 5-6 minutes over medium / high heat. keep turning the lotus root until the flesh is lightly browned
add the mirin, soy sauce and a little chilli flake. stir everything together well
add the sesame seeds and stir once more. your dish is now ready
