About the Recipe

If you have some family members who just struggle to eat their veg, this dish might just change their minds. It's got a real depth of flavour - some sweetness, a little umami and enough richness to make anyone a veggie convert. Best of all, this dish is ready in minutes...literally


100g / 3.5oz fresh shiitake mushrooms (or button mushrooms)

20g  / 0.75oz unsalted butter

120g / 4.25oz frozen or tinned sweetcorn

150g / 5.25oz sugarsnaps or mangetouts

a little salt and black pepper according to your taste

some chopped parsley for topping (optional)


cut the shiitake into 3-4 slices depending on the size

melt the butter in a frying pan. add & stir fry  the sweetcorn for 30 seconds

add the sugarsnaps and stir fry for another 30 seconds.

add the shiitake and stir fry for 2 minutes

last, add the salt and pepper to taste and stir for another 2 minutes 

take a taste and add more seasoning if you prefer

your dish is ready to serve
