Shiso and Mizuna Salad

About the Recipe

You may know shiso as green perilla. It has an alternative Japanese moniker - oba. Shiso is mostly associated with sashimi and sushi but the taste of these tender green leaves is far too good to confine it to decorating sushi. I pair it in this recipe with a lesser known Japanese leaf - mizuna - along with edamame, mushrooms and baby tomatoes,

Ingredients

20g shiso / oba leaves


20g mizuna leaves


140g baby tomatoes


100g mushrooms


50g fresh or frozen edamame

Preparation

 wash the shiso and mizuna leaves well and cut roughly


slice the mushrooms into halves or quarters depending on their size


cook the edamame in salted water for 3 mins then drain


assemble the ingredients in a salad bowl


drizzle with a vinaigrette or other salad dressing
