If you are struggling with a new way to serve a celebration salmon dish, then here's the answer! Miso baked salmon is easy to make and as long as you leave the salmon to marinate for at least an hour or two , then success is all but guaranteed. The marinade is a mixture of miso, sugar, soy sauce, mirin and garlic so you get a sweet and salty rich flavour to infuse the salmon. Once you've created your marinade and spread it over the salmon, just leave for at least an hour but preferably longer. It's one of those dishes where the prep can be done early morning and then left until just before lunch to cook. Once you're ready to bake your salmon, just get your oven up to 200 C / 390 F (fan) and cook for 20 minutes. That's all there is to it - Miso baked Salmon is a simple, quick and utterly delicious recipe for when you want to wow family or friends without too much effort! As you can see from the picture I garnish my Miso baked Salmon with some rocket leaves and cress but I leave that part up to your personal preference.

ingredients:
a half salmon (boneless), rinsed
2 - 3 cloves of garlic
6 tbsp miso
3 tbsp sugar
4 tbsp mirin
2 tbsp soy sauce
a sheet of aluminium foil (about 50 cm X 50 cm / 20 in X 20 in)
1-2 tbsp vegetable oil for oiling the foil
some rocket and cress for garnishing
how to:
to prepare the marinade:
chop & mince the garlic and put it in a small bowl
add the miso, sugar, mirin and soy sauce and mix well into a smooth, glossy marinade
cover the salmon with the marinade and marinate for at least an hour in the fridge but preferably longer. (I usually marinade the salmon for 3 -4 hours.)
heat the oven to 200 C / 390 F (fan) . line a large baking tray with the aluminium foil and brush the foil with the vegetable oil
place the salmon onto the foil and shape the foil around the salmon, so that the miso marinade won’t leak while cooking. add any leftover marinade before you pop the tray in the oven
bake in the oven at 200 C / 390 F (fan) for 20 minutes. carefully transfer to a serving platter. garnish with salad leaves and serve
