Miso Mayo Cod steaks
Miso Mayo Cod steaks Are you in the mood for a dose of healthy Japanese cooking? This recipe features cod steak baked with a topping of miso-mayo sauce. I'm a big fan of Atlantic cod - the flesh is softer than the pacific variety and the fish themselves tend to be bigger meaning its easier to get nicely sized steaks (or large fillets, if you will). Atlantic cod is also a little sweeter so it makes a great combination with the rich savoury flavours of the miso-mayo topping.

Oyakodon
Here is a classic Japanese dish called Oyakodon that you'll find in homes and restaurants throughout the country.

Yakitori sauce
Yakitori sauce Here's the Yakitori sauce recipe that I used for my Yakitori recipe. It's dead easy to make (not to mention much cheaper than buying a branded sauce from the shops) and it has no additives, preservatives, stabilisers or any of the other stuff manufacturers put into their products to extend their shelf life. This sauce contains some chicken skin to give it a little oil which combined with the sugar helps the sauce "cling" when you brush it over your yakitori. If

Tofu & Egg Donburi
Tofu & Egg Donburi If you haven't already noticed, I am a big fan of one bowl donburi dishes (a donburi being a bed of steamed rice on top of which a variety of accompaniments are piled.) A little while ago, I posted a recipe for Oyakodon (AKA Mother & Child donburi), which has a topping of chicken and egg. Here is a non-meat alternative substituting tofu for the chicken. The key with this dish is to cook the tofu long enough so it takes up a little of the flavour of the s

Japanese Onion sauce
Japanese Onion sauce You may have seen this recipe already on my blog with my Japanese Steak salad and Onion sauce dish. I am posting it separately as well just because it goes well with so many things and not just meat. You could try this with a cod or tuna steak or with deep fried tofu - it's easy to make, versatile and a great "go to" when you need a tasty sauce in a hurry. You can find the Youtube tutorial by clicking Japanese Onion sauce and the written recipe is as belo

Daigaku Imo - Japanese brain food?
Daigaku Imo Here's my recipe for a dish called Daigaku Imo in Japanese which literally translates as "university potato". There are various stories about why caramelised sweet potatoes became associated with a university - some say the dish was invented by a student struggling to pay his fees, others that the dish was first popularised by an outlet selling its wares to students at the nation's #1 learning centre, Tokyo University. My guess is that these potatoes appealed to

Miso minced Pork in lettuce leaf wraps
Miso minced Pork in lettuce leaf wraps I love sharing platters of food with family & friends, don't you? I don't know what it is but there's something communal about eating with your hands that seems to bring people together. So, to me, these Miso minced Pork and Lettuce wraps are a kind of finger food heaven. You might think that the Japanese eat everything with chopsticks but we eat with our hands as well. If you want to, you can always eat sushi with your fingers! Miso

Eggplant / Aubergine and Pepper Nabe Shigi
The Japanese love their eggplant/aubergine (or nasu as it's called locally). It's far more a part of Japanese cookery than it is here in the UK, which is a shame for the Brits because aubergine is very good for you. Traditionally, aubergine was thought to have a cooling effect on the body (because of its high water content) but modern science shows it's also high in vitamin B6 and C as well as minerals like potasium and manganese.
